Make the Best Vegetarian Taco Bowls

Before Taco Bell started making what they call the taco bowls that I used to eat in high school, I made these from home! I attended a boarding school, and they used to make these as well! But in both places, they certainly were not Vegetarian! So that leads us to the question, “How can I make the best VEGETARIAN Taco Bowl?

  • 3/4 cup (180 ml) coconut milk canned (*see notes )
  • 3 tbsp (20 g) Nutritional Yeast flakes
  • 2 tbsp Tapioca Flour OR arrowroot flour/starch (*see notes)
  • 1/2 tsp Sea Salt/ Himalayan salt (or to taste)
  • 1/2 tsp Onion Powder (optional)
  • 1/4 tsp Garlic Powder (optional)
  • Pinch of Smoked Paprika (optional)

It all starts with a Cheese sauce!

These vegetarian Taco Bowls taste out of this world! The most complimentary ingredient is by far the cheese sauce! Make sure that you remember not to make your cheese sauce too thick. When seasoning it, ensure that you are using paprika as well as salt and pepper to taste. The paprika should give it a deeper orange and a smoky flavor. That paprika is going to give it a natural smokiness, adding to the overall taste.

Cheese Sauce Vegetarian

Cheese sauce can be inherently pretty thick so, I begin by putting all ingredients into a saucepan and letting simmer on low/mid-heat. I adjust the thickness with the coconut milk, ensuring that my cheese mixture isn’t too thick and isn’t too thin. Thickness should fall off of a spoon with ease without being too liquidy.

I add all ingredients to the cheese sauce in the pan and usually also use a cup to a can’s worth of coconut milk to moderate the thickness. I used some smoked paprika, onion powder, garlic powder, nutritional yeast, and some Himalayan sea salt. This cheese tops my deconstructed taco bowl.

Quick note on nutritional yeast: There are many ways to use nutritional yeast while cooking. It’s an excellent ingredient to keep on hand for vegan cooking. Nutritional yeast provides a pleasant cheese-like taste (without any actual dairy added)

Time for Veggies!

All right, so here we go. The base and primary source of protein of our Taco bowl needs to be black beans. Follow the cooking directions on the can or bag and prepare 1cup of black beans. Next, take your corn chips and line the plate, Ill also plate the cooked black beans. I’m going to take my beans and lay them over the corn chips, and then I’m going to take my cheese that I just made and pour it on top of the cooked beans. So our layers are as follows: Chips, Beans, Cheese mix. Now take some time to dice some tomato and chop some lettuce. These items fall to the sides of our layers. This process allows you to scoop as much or as little lettuce and tomato to your taco bowl mix. Mash some ripened Avocado and add cilantro and lime. Your mashed avocado is a dip/addition for your taco bowl. Accompaniments are great options to have with your taco bowl so that you can customize the taste on the fly as you eat!
